Ingredients:
- 1/2 Block of extra firm tofu, drained as much as possible
- 1/4 c onion
- 1/4 c mushroom
- 1 – 2 tbsp ground turmeric
- 1 tsp garlic powder
- Salt/Pep to taste
- Preferred cooking oil
- Toast, Avocado, & Tomato recommended to topping & side
Directions:
- Drain tofu as much as possible. Use a dishtowel (or paper-towels but try and save the planet first!) and press the tofu to get as much liquid out as possible. Let sit while doing step 2.
- Chop veggies (add more or omit whatever you’d like! If omitting onion, would suggest adding onion powder). Saute veggies over medium heat with your cooking oil of choice for about 3 minutes.
- Add tofu to pan by crumbling between your hands. It doesn’t have to be a fine crumble, just a rough squish in your hands. The “bigger” chunks are very realistic to eggs.
- Add turmeric, garlic, salt/pep to taste. Mix well until turmeric is evenly coated, turn the tofu bright yellow.
- Remove from heat, serve with toast. Top with Avocado & Tomato.
