Tofu Scramble

Ingredients:

  • 1/2 Block of extra firm tofu, drained as much as possible
  • 1/4 c onion
  • 1/4 c mushroom
  • 1 – 2 tbsp ground turmeric
  • 1 tsp garlic powder
  • Salt/Pep to taste
  • Preferred cooking oil
  • Toast, Avocado, & Tomato recommended to topping & side

Directions:

  1. Drain tofu as much as possible. Use a dishtowel (or paper-towels but try and save the planet first!) and press the tofu to get as much liquid out as possible. Let sit while doing step 2.
  2. Chop veggies (add more or omit whatever you’d like! If omitting onion, would suggest adding onion powder). Saute veggies over medium heat with your cooking oil of choice for about 3 minutes.
  3. Add tofu to pan by crumbling between your hands. It doesn’t have to be a fine crumble, just a rough squish in your hands. The “bigger” chunks are very realistic to eggs.
  4. Add turmeric, garlic, salt/pep to taste. Mix well until turmeric is evenly coated, turn the tofu bright yellow.
  5. Remove from heat, serve with toast. Top with Avocado & Tomato.
