Vegan Southwest Chick’n Salad

Ingredients:

  • 1 head of romaine lettuce
  • 1 can organic black beans (16oz) (drained & rinsed)
  • ½ Package of cherry tomatoes
  • ½ cup green onions chopped
  • 2 tbsp cilantro
  • 1 packet taco seasoning
  • 1 bag Gardein crispy tenders
  • JUST Chipotle Ranch
  • 2 Avocados

Directions:

  1. Bake Gardein Crispy Tenders according to package. While that is baking, prepare ingredients.
  2. Wash romaine lettuce. Chop to your liking, place in bottom of bowl.
  3. Add black beans, cherry tomatoes, green onions, and taco packet to bowl. Toss.
  4. Once Crispy Tenders are ready, chop and add to bowl as well.
  5. Top with Chipotle ranch and toss. Top with avocado. Serve.
