Pumpkin Spice Protein Balls

Ingredients:

  • ¾ cup oats
  • ½ cup to ¾ cup of almond flour
  • 1 tbsp ground cinnamon

  • 1 tbsp pumpkin pie spice
  • ¼ cup vanilla plant-based protein powder
  • ¼ cup maple syrup
  • ¼ cup nut butter
  • 1 tsp vanilla extract

Directions:

  1. Grind oats in blender or food processor
  2. Add almond meal, cinnamon, pumpkin pie spice, protein powder, maple syrup, nut butter, and vanilla extract to a food processor or bowl. Mix well. Should be dough like paste. If the texture seems gooey, add more almond flour to ensure ball will keep its shape.
  3. With tablespoon + small bowl of water: (*dipping fingers and rubbing water on them will help the mixture not stick to your hands*) spoon out table-spoon size and roll into ball.

*For more pumpkin spice flavor, omit cinnamon, add more pumpkin pie spice.

*Store in air tight container. Will keep in fridge for a week +.
