Ingredients:
- ¾ cup oats
- ½ cup to ¾ cup of almond flour

1 tbsp ground cinnamon
- 1 tbsp pumpkin pie spice
- ¼ cup vanilla plant-based protein powder
- ¼ cup maple syrup
- ¼ cup nut butter
- 1 tsp vanilla extract
Directions:
- Grind oats in blender or food processor
- Add almond meal, cinnamon, pumpkin pie spice, protein powder, maple syrup, nut butter, and vanilla extract to a food processor or bowl. Mix well. Should be dough like paste. If the texture seems gooey, add more almond flour to ensure ball will keep its shape.
- With tablespoon + small bowl of water: (*dipping fingers and rubbing water on them will help the mixture not stick to your hands*) spoon out table-spoon size and roll into ball.
*For more pumpkin spice flavor, omit cinnamon, add more pumpkin pie spice.
*Store in air tight container. Will keep in fridge for a week +.
