The Best Dang Vegan Mashed Potatoes

Creamy. Savory. Rich. Buttery. Salty. Thicc. Serves about 4 heaping servings.

Ingredients:

  • 8 red potatoes
  • 1 cup Unsweetened Almond Milk
  • ½ stick Vegan Butter
  • ½ – 1 cup Vegan Cream Cheese or Sour Cream
  • Salt
  • Pepper

Directions:

  1. Fill large pot half way with water and bring to a boil.
  2. Cut red potatoes into quarters and add to boiling water. Boil for about 15 minutes until potatoes are tender when poked with fork.
  3. Drain potatoes and add back to pot. Turn eye down to low.
  4. Mash potatoes with potato masher until crumbly.
  5. Add plant milk, cream cheese or sour cream (or both), salt and pepper – use masher to combine. Add more as needed/preferred.
