Creamy. Savory. Rich. Buttery. Salty. Thicc. Serves about 4 heaping servings.
Ingredients:
- 8 red potatoes
- 1 cup Unsweetened Almond Milk
- ½ stick Vegan Butter
- ½ – 1 cup Vegan Cream Cheese or Sour Cream
- Salt
- Pepper
Directions:
- Fill large pot half way with water and bring to a boil.
- Cut red potatoes into quarters and add to boiling water. Boil for about 15 minutes until potatoes are tender when poked with fork.
- Drain potatoes and add back to pot. Turn eye down to low.
- Mash potatoes with potato masher until crumbly.
- Add plant milk, cream cheese or sour cream (or both), salt and pepper – use masher to combine. Add more as needed/preferred.
